From there I weed out the ones with a lot of ingredients I don’t have on hand, ingredients my kids won’t touch with a ten-foot pole, and ingredients I can’t get in my local stores.

I love my Instant Pot because it is great for chucking food in and walking away to do other things. Much like a slow cooker but it doesn’t take all day.

Plus my kids are getting pretty good at using it too, we used this course to teach them Instant Pot Safety and recipes.

Trust me, you’ll love your Instant Pot. The only thing I regret about getting mine is not getting it sooner. I always thought it was just a glorified slow cooker but it is SO MUCH MORE.

I asked for this one as a gift because it takes the place of a slow cooker, rice maker, yogurt maker, and steamer just to name a few.

1. The Best Instant Pot Chicken Breast Recipe

Boneless chicken breasts are one of those things that no matter what I did they turned out DRY! The kids complained that they were either rubber or sawdust.

So, I hit Google to find a recipe that will tell me what I am doing wrong!

I found “The Best Instant Pot Chicken Breast Recipe {USING FRESH OR FROZEN CHICKEN}” and read it over. I love that you can use frozen or fresh and it looks so easy!!

Chicken breasts are so versatile and can be used in so many great things this summer such as salads, sandwiches, used to dip in sauce, and more!

I’m can’t wait for boneless chicken breasts to go on sale so I can try this out!

2. Instant Pot Chicken Broccoli Rice Casserole

This recipe uses boneless chicken breasts and she has some great tips for cooking rice in the Instant Pot. I highly suggest reading them because I find grains can easily be undercooked or overcooked.

This recipe is quick, get dinner on the table in as little as 45 minutes!

3. Pressure Cooker Apricot Chicken

This is another great recipe for boneless chicken breasts.

All you need is 5 ingredients! Perfect for topping your leftover rice.

4. Instant Pot Hawaiian Chicken

Can you tell I was hunting for ways to fix the sawdust chicken?? Ha!

In my opinion, this Hawaiian Chicken uses chicken thighs that are always more flavorful. But she says to feel free to use boneless chicken breasts if you have those on hand.

This recipe is filled with great ingredients including macadamia nuts, coconut oil, peppers, pineapple and more!

5. Instant Pot Chicken Cacciatore

I really liked that this was a mix of “open some cans and dump them in” plus chop up fresh veggies.

Although the recipe calls for chicken thighs the author mentions using chicken breasts instead. Use what you have on hand or what is on sale!

As much as I love burgers on the grill in the summer I don’t always have time. Here are a few easy summer Instant Pot recipes for beef.

1. Instant Pot Beef and Broccoli: Whole30, Paleo and 30 Minutes!

Beef and Broccoli is probably one of our favorite take-out foods to eat. The problem with take-out is that it can be high in salt and hard on the wallet.

2. Instant Pot Taco Meat

Tacos are another family favorite. This Instant Pot recipe is perfect for topping with fresh summer ingredients such as tomatoes and crispy lettuce!

Toss everything in your Instant Pot and 20 minutes later you are ready to go. I would recommend making a double batch and freezing some for the next long work day.

1. Easy Instant Pot Country Style Ribs

Ribs are one of those foods that always feel like a “reward”. Perfect for a Friday night after a long week of slaving away.

This recipe uses boneless pork ribs and takes about an hour. It is also great for anyone following a low carb or Keto program because each 4oz serving of ribs only has 5 net carbs.

Lettuce wraps are my new best friend.

I love how fresh and spring-like they give food. This recipe has a two-step process, first, you make the wheat berries and then you make the meal.

With only 15 minutes of prep time, this recipe is great for busy moms.

3. How To Make Chinese Spare Ribs In Instant Pot

This recipe requires 4 ingredients and 22 minutes in your Instant Pot!

1. Instant Pot Shrimp Scampi

We don’t eat a lot of seafood but when we do, shrimp is at the top of our list.

This recipe is fast, takes less than 10 minutes to prepare, and is perfect for serving over rice or pasta.

2. Cioppino Seafood Stew | Instant Pot Recipe

I grew up in a fishing village for a few years of my life. You really can’t beat fresh fish from the sea.

I’ve eaten a lot of seafood but I had never heard of this. I’m excited to check it out.

My favorite part? You get 4 cups of whatever seafood you like.

1. Instant Pot Potato Salad (Gluten-Free)

Potato Salad screams summer!! I never thought of making it in my Instant Pot!

This recipe is easy and super easy to customize. Oh, you like dill pickles in your salad? Do that!

I find this very important because I change every single recipe to suit our needs. Ha!

2. Instant Pot Chicken Bacon Avocado Salad

I have been trying to find more ways to sneak avocados into our meals. It is so good for you, but I am not a fan of the taste.

Be sure to add more of the ingredients you like such as corn and bacon and less of the ones you don’t…like avocado!

I love cooking dried beans in my Instant Pot because it is budget-friendly and they taste better. I use this method for beans.
